Slow Cooker Chicken Marinara with Basil Zucchini Noodles

Ingredients

1 3-4 pound chicken, giblets removed at reserved for stock
1 onion, sliced
1½ cups of homemade marinara or your favorite store-bought marinara
sea salt and pepper
4 medium zucchini
¼ cup fresh basil
shaved parmigiano regiano to taste (optional)

Instructions

Place the sliced onion in the bottom of the slow cooker
Generously season the chicken with sea salt and pepper and place it in the slow cooker on top of the onions
Pour the marinara sauce over the chicken
Put the lid on the slow cooker and cook on high for 3-4 hours or low for 6-8 hours


When the chicken has cooked through, remove it from the slow cooker and set aside to cool enough that you can handle it


In the mean time, spiralize your zucchini noodles. I like to do about 1 per person
Place the noodles in a colander fitted over a bowl. Sprinkle with sea salt and allow the noodles to sit for about 5 minutes. The excess water will fall into the bowl. Discard that.
When the chicken is cool enough to handle, shred the meat from the bones and place it back into the slow cooker to warm in the sauce.

Taste the chicken and sauce and season with sea salt and pepper
Tear up the fresh basil into pieces and toss it in with the zucchini noodles.

To plate, lay a bed of zucchini noodles on the plate, spoon the chicken along with some of the sauce over the noodles. Garnish with Parmesan cheese (optional) and extra basil. Enjoy!

Slow Cooker Steel Cut Oats


Steel cut oats use a 4:1 liquid to oats ratio. You can use any combination for the liquid – water, soy milk, almond milk, normal milk all work well.

Most of us are too busy to make breakfast in the morning, so a big pot of steel cut oatmeal made in a slow cooker is the perfect solution to make sure you always have a healthy meal to start the day.

Prep time: 5 min

Cook time: 8 hr

Total time: 8 hr 5 min

Serves: 10-12

Ingredients

Steel cut oats – 2 cups
Water – 6 cups
Milk (any type) – 2 cups
Apples, peeled & chopped (optional) – 2 to 3
Brown sugar – ¼ cup
Kosher salt – 2 tsp
Cinnamon – 1 Tbsp
Star anise (optional) – 2 to 3

Instructions

Optional: Give your slow cooker a quick spray of cooking spray or brush with cooking oil to prevent sticking of ingredients.

Put all ingredients in a slow cooker. Cover and cook on low for 8 hours or 4 hours on high. Portion out and reheat as needed!

Top as desired! Add Peanut Butter, fruit, coconut shavings!

For the 21 Day Fix Measure out your containers on the cooked oatmeal, add in your Tsp (PB or nut butters) any fruit etc.. as desired!

Pizza- Crock Pot Style!


Ingredients

2.25 cups ground turkey, cooked and seasoned with 1 tsp. Worcestershire sauce, 1 tsp garlic powder, 1 tsp onion powder
1-15 ounce jar pizza sauce
2 cups mozzarella cheese, shredded
2/3 cup Parmesan
3 cups fresh spinach
16 slices turkey pepperoni
1 cup mushrooms, sliced
1/2 green pepper, chopped
1/2 cup sweet onion, chopped
1/4 cup marinated artichoke hearts, chopped
2 cloves garlic, minced

Directions

In a large bowl, combine ground turkey with sauce and onions. Place half of sauce mixture in the bottom of a 6 quart crock pot.
Place half of fresh spinach on top of sauce mixture.
Place pepperoni and 1/2 desired toppings on top.
Place half of mozzarella and Parmesan cheese on top of toppings.
Repeat layers ending with mozzarella and Parmesan.
Cook on low 4-6 hours.
Let cool slightly and cut into 8 slices. Refrigerate remaining.

No yellows! All flavor!
